How much commission does DoorDash take from restaurants, and how does that compare to RestApp? +

On the DoorDash Marketplace, restaurants pay a per-order commission based on their plan: 15% on Basic, 25% on Plus and 30% on Premier, calculated on the order subtotal before tax and tip. Pickup orders are 6% on every plan. There can also be payment processing and optional Sponsored Listing ad fees on top. RestApp charges 0% commission on orders that come through your own branded website and apps, so the full value of each order stays with you on a simple monthly plan.

If diners order through DoorDash, do I own the customer relationship and data? +

No. When someone orders on the DoorDash Marketplace, that diner is DoorDash's customer, not your restaurant's, and you don't receive the full customer relationship or data to remarket to them directly.
